Sausage Casserole
Ingredients :
8 Pork Sausages (Value, however they are Waitrose Value as I still have standards) – Cut each sausage into 3 equal chunks.
2 Medium Red Onions Cut into thick slices
1 Small Onion chopped finely
2 Cloves of Garlic crushed
3 Large Carrots cut into large chunks. (about 4-5 times the thickness of your average slice)
1 Teaspoon of Smoked Paprika or Hot Chilli Powder if you are up to it.
1 400gm Tin of Chopped Tomatoes (Value again)
1 400gm Tin of Mixed Beans or Butter Beans (Whatever you prefer)
2 tbl spoons of Tomato Puree
1 tbl spoon of Worcester Sauce
1 Chicken Stock Cube dissolved in 400ml of Boiling Water
Some Sunflower Oil or Some Butter if you aren’t on some pussy diet.
Method:
Fry the sausages in a frying pan until browned and remove from the heat.
In a huge pot or a casserole pot fry your Onions (Red and non-red) and Garlic for a couple of minutes in some Butter or Oil.
Add Carrots and stir round a bit.
Add Smoked Paprika/Chilli Powder and stir round a bit.
Add Tomato Puree and stir…. you get the idea.
Add Tomatoes and Tin of Beans and stir
Add Stock and stir
Season with some Black Pepper if you wish.
Stick a Lid on it and simmer on a low heat for around 30 minutes.
After 30 minutes, take the lid off and stir well. Leave the lid off and continue to simmer until the sauce has reduced and thickened enough to not look like red water (about another 30-45 minutes).
Serve with Rice, Bread or Potatoes
If you are really hungry serve with all 3, whatever floats your boat.
I have no idea how many calories this is per portion but it should feed 4 – 6 people depending on your level of ravenous hunger.
